Christmas Chutney
Chutnies are a great way to use up fruits (both dried and fresh) and vegetables. This delicious Christmas chutney uses a blend of warming spices to make the most of what is available at this time of year.
Makes about 500 grams
Ingredients
60 grams cooking apples - peeled and diced (pears are a great alternative)
60 grams dried dates - chopped
60 grams dried prunes – chopped
60 grams cranberry’s – fresh or dried
2 centimetres grated ginger
1 clove garlic – crushed (optional)
150 millilitres red or white wine vinegar
120 grams light brown sugar
pinch allspice
pinch cinnamon
Method
Place all the ingredients in a large saucepan.
Bring to a simmer and stir well.
Simmer for 30 - 40 minutes, stirring occasionally.
Cook till the mixture is thick and syrupy.
Spoon in to clean sterilised jars.
