Patatas Bravas is essentially crispy fried potatoes with a spicy tomato sauce. Lucky for us, leftover roasties are perfect for this dish.

  • Around 800g leftover roasties or boiled potatoes, chopped into 2cm cubes

  • 1 onion, finely chopped

  • 2 garlic cloves, finely chopped

  • 1 x 400g can chopped tomatoes

  • 1 tablespoon tomato puree

  • 2 teaspoons sweet or smoked paprika

  • Chilli powder (as much or as little as you like)

  • Pinch of sugar

  • Fresh parsley, chopped (optional)

  • 4 tablespoons olive oil

Method

  1. Heat 1 tbsp oil in a pan and fry onion for 5 minutes until soft and golden.

  2. Add garlic and fry for another 1-2 minutes.

  3. Mix in chopped tomatoes, puree, paprika, chilli powder and sugar, then simmer for 10 minutes. Adjust seasoning to taste.

  4. Heat 3 tbsp oil in a large frying pan and add potatoes and fry until crispy, stirring continuously. You may need to do this in batches if the pan is crowded, and add a more oil if necessary.

To serve

Serve potatoes in a bowl topped with spicy tomato sauce. Sprinkle fresh parsley on top, if you like.

For something different, add chopped chorizo to the potatoes while they’re crisping, or try adding a fried egg on top when you serve.
